Blackened Sea Bass

Prepare grill for direct cooking using hardwood charcoal.

Melt 3 tablespoons butter or margarine (or alternative) in a small saucepan over medium heat.

Dipe Sea Bass or catfish into metled butter. Coat both sides evenly.

Coat both sides of fish evenly with Fishermans's All Natural Seasoend Breading Mix.

Place fish on grid. Grill over hot coals until fish is blackened and flakes easily when tested with a fork. Turn fish halfway through grilling time.
