How to Select Fresh Fish

The eyes should be bright, clear, full and bulging. The scales should have a bright sheen Fresh fish does n0t have a "fishy" odor. The flesh should be firm and elastic and should spring back when pressed.

Amount of fish to buy

Whole Fish: - 1 lb. / serving

Drawn Fish: - 1 lb. / serving

Dressed or Pan-dressed: - 1/2 lb. / serving

Steaks (3/4" thick): - 1/2 lb. / serving

Fillets: 1/3 - 1/2 lb / serving

Substitutions:

Substitute eggs with: Egg Substitutes, Non-fat plain yogurt, Skim or 1/2% Milk

Substitute butter or margarin with: Non-stick spray or cholesterol free cooking oil
